Christmas Rush and a Baked Apple Pancake

Christmas is really coming and no one can stop it... It's been a very busy, hectic, and so crazy week... and this week will be no different... and yes, it has a lot to do with workloads that has to be done before everybody gets to pack and leave... and again, I still have to do a lot of last minute shopping, told you guys, I procrastinate... I always tend to do things the"last minute", but what the heck? Rushing is a vital part of the Holiday Season, right?... On the other side, there were and still are Christmas Parties, Family Reunions to prepare and attend to... but hey, who's complaining...

For this holiday rush, I was able to squeeze in a little time to try this Baked Apple Pancake... this recipe was posted by Reeni of Cinnamon Spice and Everything Nice... Ever since I saw this recipe, I really was so intrigued and have been dying to try this and boy, am I glad I did... with just a little changes from the original recipe, I served this version of mine to a group of friends who came over for a pre-Christmas dinner, and they all loved it!!! Feel free to check the original recipe, and I'm sure you'll love it too...


Baked Apple Pancake

3 tablespoons Unsalted Butter
2 large Apples, peeled, cored, and sliced 1/4-inch thick
1/4 cup Light Brown Sugar, packed
3 Eggs
1 teaspoon Granulated Sugar
Pinch of Salt
1/2 cup Fresh Milk
1/2 cup All Purpose Flour
1/4 teaspoon Cinnamon

Preheat the oven to 450 degrees F... In a large ovenproof skillet, melt 2 tablespoons of the butter over medium heat and 2 tablespoons of the brown sugar... Add the apple slices and cook until tender for about 10minutes... Meanwhile, in a medium bowl, whisk together the eggs, sugar, salt, milk, and flour... Pour batter over apples in the skillet... Transfer to the oven, and bake until puffy, about 10 minutes... In a small bowl, mix the cinnamon and the remaining 2 tablespoons brown sugar... Cut the remaining tablespoon of butter into pieces... When the pancake puffs, remove from oven... Dot with butter and sprinkle with brown sugar... Bake for another 10 more minutes... and... Here it is...

Serve a slice with a scoop of Vanilla Ice Cream and a dollop of Whipped Cream, yum...

Enjoy the Christmas rush, no matter how irritable sometimes it may be, it comes just once a year where we can indulge...
